Course Background:

The purpose of the primary course in food safety is to provide food workers with the skills, knowledge and awareness of the importance of good food hygiene practices in line with Environmental Health Officers’ Association Revision 2 – June 2011

Course Outlines:

  • Session 1- Introduction to Food Safety
  • Session 2 - Microbiological Hazards
  • Session 3 - Food Contamination
  • Session 4 - HACCP from Food Delivery to Storage
  • Session 5 - HACCP from Food Preparation, to Cooking and Service
  • Session 6 - Personal Hygiene
  • Session 7 - Food Premises and Equipment
  • Session 8 - Food Pests and Control
  • Session 9 - Cleaning and Disinfection
  • Session 10 - Food Safety Law and Enforcement

Learning Outcomes:

  • Understand the nature of food poisoning and food borne illness
  • Identify the main causes of food contamination and recognise their controls
  • Recognise the pre requisites for food safety and good food hygiene practices
  • Explain the purpose of Food Safety Management Systems (H.A.C.C.P) and the importance of correct delivery, storage, preparation, handling, cooking and service of food
  • Understand the legal responsibilities of the food worker including personal hygiene
  • Have an awareness of the role of the Food Safety Authority and the Environmental Health Service or other relevant food safety enforcement agencies

This Course is Designed For:

It is aimed at all food workers, particularly those in the catering, retail and manufacturing sectors. It is designed so that learners can work effectively in compliance with the relevant food hygiene legislation, guidance notes, codes of practice and Irish standards.

Training Methodology:

This course is classroom based, it is highly interactive with role-playing and practical exercises to reinforce understanding and learning.

Certification:

On completion this course, participants receive EHOA certification in primary food hygiene.
